The Remy exists because we don't believe vegan should mean settling. Named for our favorite tiny chef that proved great cooking is about vision, not convention — this is a ratatouille-inspired sandwich built with the same care and craft as everything else on our menu. Baked eggplant cutlets layered with roasted red peppers, marinated tomatoes, slowly caramelized onions, toasted cannellini spread, house-pickled zucchini, and a finish of house-infused basil oil. All on semolina bread we bake in-house and cold-proof for 24+ hours. It's fully vegan, and it eats like a complete meal from start to finish.
